A good cup of coffee starts with selecting the best coffee beans.

Here at Anjana we select only the best , 100 % high land shadow Arabica from the mountains in the north off Thailand , and carefully selected Robusta beans from the south of Thailand are used for Anjana roasts.

Roasting is not only a technical skill it is an form off art.  It takes years of training to become an expert roaster.  the ability to 'read' the beans and make decisions with split second timing can only be done by very experienced people ,”the master roaster” . The difference between perfectly roasted coffee bean and a ruined batch can be a matter of seconds. Roasting is a heat process that turns coffee into the fragrant, hard dark brown beans we are familiar with. Roasting brings out the aroma and flavor that is locked inside the fresh green coffee beans . the  Roasting causes numerous chemical changes to take place as the beans are rapidly brought to very high temperatures. When they reach the peak of perfection, they are quickly cooled to stop the process. Roasted beans smell like coffee, and weigh less because the moisture has been roasted out. Once roasted, they should be used as quickly as possible before the fresh roast flavor begins to diminish.
